Zesty Fiesta Salsa Recipe

Ingredients:

  • 2 cans of Mexican stewed tomatoes
  • 2 cans of diced tomatoes
  • 1 large can of crushed tomatoes
  • 1 can of Rotel with lime and cilantro
  • 1 Yellow onion to 1 and 1/2, chopped
  • 1 Anaheim pepper, chopped
  • 1 Serrano pepper, chopped
  • 1/4 cup to 1/2 cup chopped fresh cilantro
  • 1/2 tsp. Dried cumin
  • 2 tsp. Minced garlic
  • 1 Bunch chopped green onions
  • 2 tsp. Salt
  • 1 T. sugar
  • 1/4 cup white vinegar
  • Add extra can of diced tomatoes if too spicy
  • I also add sometimes 1/8 cup of lime and lemon juice

 

Mix well.

Chop finely or I put everything in the food processor. Then mix it all together.
