Beef Lettuce Wraps

1 pack of lean ground beef
1 red onion
1 mango
2 cups broccoli slaw
1 tablespoon lemon vinaigrette
8 lettuce leaves (romaine or iceberg)
1 cup rice

1. Prepare rice as instructions state on box / container.
2. Preheat large saute pan 1-2 minutes on medium-high. Place beef in pan and brown (4-5 minutes). Stir frequently to help crumble meat and continue until no pink remains.
3. Slice onion, peel mango and chop into desired size. Combine in large bowl the onion, mango, broccoli slaw and lemon vinaigrette. Once rice is prepared, stir into beef and cook 3-4 minutes
4. Remove pan from heat. Place lettuce leaves on serving plate and fill each one with beef and rice mixture, then top with slaw and enjoy!
