Stovetop Lasagna à la Vodka

1 tbs extra virgin olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1-28oz can crushed tomatoes
1/3 cup Vodka
Salt & Pepper to taste
1/2 cup heavy cream
12 cooked lasagna noodles
1 lb Italian sausage
2 cup ricotta cheese
2 cup shredded mozzarella
Chopped fresh parsley

For sauce: brown the sausage and set aside. In a medium saucepan over medium heat, heat oil. Add onion and saute until soft, then stir in garlic and cook until fragrant. Add the tomatoes and vodka and simmer about 15 minutes to let the alcohol cook off. Season with salt and pepper, to taste. Stir in heavy cream and Italian sausage and remove from heat. Grease a large skillet with olive oil and place on the burner. Assemble the lasagna: spoon a thin later of sauce into the skillet for the bottom layer. Add 4 noodles, cutting them if necessary to fit the pan. Spread 1 cup of the ricotta over noodles and sprinkle with mozzarella. Repeat the process of sauce, noodles then cheese. The final layer will just be sauce, noodles, and mozzarella, no ricotta. Cover the skillet and cook on medium-low until the cheese is melted, about 15 min. I like to broil for about 5 min at the end to brown a bit. Then sprinkle with parsley and serve.
